Breakfast Pizza Casserole

It is a fact of life that little things happening in the morning can really impact your mood and how the rest of your day goes. Waking up to a puking kid at 5 a.m. usually will start the day in a downward spiral. Having your hair turn out just right equates to a good day. Realizing that your car’s gas tank is on empty and you are already running late for where you need to be? Not a great day. Hearing your favorite song on the radio when you wake up in the morning can make a great start to a day. Losing your contact down the bathroom sink? A bad day is on the horizon.

If your day has started off with a “looks like someone woke up on the wrong side of the bed” frame of mind, don’t fret. There is still a way to turn your day around easily without losing it to the bad karma monsters. Start your morning off with a delicious breakfast. Fruit, yogurt, cereal, toast, bagels . . . take a few minutes out to sit with your family to eat and your day will most certainly start to turn around the right way. (Well, that is if no one spills their milk or empties a whole box of cereal onto the floor while pulling it down off of the pantry shelf.)

For an extra-special start to the day, I like to make breakfast pizza. If you are pressed for time, preparing it the night before and then baking it in the morning works out well. Guaranteed to turn any down in the dumps outlook into an optimistic frame of mind, this pizza is filling, flavorful, and very easy to put together. Fend off a bad day the right way with the right start. What a difference the right breakfast can make! Recipe after the jump . . .

Breakfast Pizza

1 lb ground pork

5 slices bacon

1 8oz package Pillsbury crescent rolls

1 cup shredded hash browns - thawed

1 4-ounce can mushrooms, drained

1 cup shredded Cheddar cheese

1 cup shredded mozzarella cheese

5 eggs

1/4 cup milk

2 tablespoons Parmesan cheese

Brown pork and drain fat. Cook bacon and blot off grease. Cut bacon into small, bite-size pieces. Lightly spray a 9- x 13-inch glass cake pan with cooking spray. Press crescent rolls on bottom and up sides of pan. Layer pork, hash browns, mushrooms, bacon, Cheddar and mozzarella cheeses on top of crescent roll dough. In a separate bowl, beat the eggs and milk together. Pour egg and milk mixture over the top of other ingredients in the 9- x 13-inch pan. Sprinkle Parmesan cheese over the top. Bake in 350 degree oven for 30-35 minutes.

  • 60 ml lemon juice
  • 60 ml soy sauce
  • 0.9 g ground ginger
  • 1 g garlic powder
  • 455 g cubed pork meat
  • 10 ml peanut oil, or sesame oil
  • 1 large onion, diced
  • 1 large carrot, sliced
  • 90 g broccoli florets
  • 1 (15 ounce) can sliced peaches, with juice
  • 8 g all-purpose flour

DIRECTIONS

  1. In a glass bowl or casserole dish, combine the lemon juice, soy sauce, ground ginger, and garlic powder. Place the pork into the dish, cover and refrigerate for several hours or overnight.
  2. Heat the oil in a wok over medium-high heat. Add the pork, marinade and onion, and cook stirring constantly until the meat is cooked through. Throw in the carrot and broccoli, and cook for a few minutes, then add the peaches with the juice, and bring the mixture to a boil. Sprinkle the flour over the mixture, and stir in. Cook, stirring, until the sauce thickens. Serve over rice or noodles.

Ingredients:
2 tablespoons unbleached all-purpose flour
1/2 teaspoon crushed dried thyme
1/4 teaspoon sweet paprika
1 1/2 pound boneless beef round steak - cut 1 inch thick
1 tablespoon Worcestershire sauce
canola oil cooking spray
1 clove garlic - peeled and thinly sliced
2 medium thinly sliced celery ribs
2 medium onions - peeled and thinly sliced
4 medium thinly sliced plum tomatoes
1/2 cup reduced-sodium canned beef broth

Directions:

In a small bowl, combine flour, thyme, and paprika. Brush steak pieces with Worcestershire sauce. Dredge in flour mixture.

Lightly coat a nonstick skillet with cooking spray. Place on stove over medium-high heat.

Add steak pieces and brown on both sides, about 5 minutes per side.

Transfer steak pieces to a 3-quart (3-liter) or larger crockery slow cook. Top with garlic slices, celery, onions, and tomatoes.

Pour beef broth over the top. Do not stir. Cover and cook on low for 8 to 10 hours or on high for 4 to 5 hours.

To serve, transfer steak pieces and vegetables to a heated serving platter. Spoon any pan juices over the top and serve at once.

  • 2 (29 ounce) cans tomato sauce
  • 448 g macaroni

DIRECTIONS

  1. Cook pasta according to package directions. Drain.
  2. In a Dutch oven, brown ground beef over medium heat. Add chopped onion, and cook until onion is soft. Add green pepper and tomato sauce; cook until pepper is soft.
  3. Serve sauce over pasta.

  • 15 ml vegetable oil
  • 0.5 red onion, sliced
  • salt and pepper to taste
  • 455 g zucchini, sliced
  • 8 g crushed garlic
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (15.25 ounce) can whole kernel corn, drained
  • 120 ml heavy cream

DIRECTIONS

  1. Heat oil in a large saucepan over medium heat. Stir in red onion, salt and pepper, and cook about 5 minutes, until onion is tender. Stir in zucchini, and cook 3 to 5 minutes. Mix in garlic and tomatoes. Continue cooking, stirring occasionally, until the mixture comes to a boil.
  2. Stir corn and cream into the mixture. Reduce heat to low, and continue cooking, stirring occasionally until thick and bubbly, 15 to 20 minutes

2 pounds chuck roast -- cut in 1" strips
1/2 cup flour
1/2 teaspoon salt
1/2 teaspoon pepper
1 large onion
2 large green peppers
1/2 cup ketchup
1 cup barbecue sauce
1/2 cup water
1 can (4 oz size) mushrooms
1 tablespoon molasses
2 tablespoons brown sugar
1 tablespoon soy sauce

Directions:

Place steak strips, flour, salt, and pepper in slow cooker. Stir well to coat steak.

Slice onions and pepper very thin. Add to slow cooker, along with rest of the ingredients.

Cover, cook on high for 1 hour, then low for 8 hours.

Serve over rice, noodles, potatoes, or with crusty bread. Also makes a good sandwich filling.

  • 2 large potatoes, peeled and chopped
  • 2 large eggs
  • Flour
  • 115 g bacon, chopped
  • 0.5 large onion, chopped

DIRECTIONS

  1. Bring a large pot of lightly salted water to boil.
  2. Place potatoes in food processor, and pulse until finely chopped. Add eggs, and pulse a few times to combine. Pour mixture into a large bowl. Mix in enough flour to make a very thick dough.
  3. Place dough by spoonfuls into boiling water. Boil until done, about 20 minutes (depending on size). Drain, and set dumplings aside.
  4. Place chopped bacon and onion in a skillet over medium heat. Cook a few minutes until bacon releases fat. Place hot dumplings into pan; cook until bacon is crisp and onions and dumplings are browned.

  • 300 g white sugar
  • 355 ml water
  • 0.6 g ground cinnamon
  • 0.4 g ground nutmeg
  • 6 drops red food coloring
  • 45 g butter

  • 250 g sifted all-purpose flour
  • 7 g baking powder
  • 6 g salt
  • 135 g shortening
  • 120 ml milk

  • 6 apples, peeled and cored
  • 25 g white sugar
  • 7 g ground cinnamon
  • 6 g ground nutmeg
  • 85 g butter

DIRECTIONS

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a medium saucepan over medium heat, combine 1 1/2 cups sugar, water, 1/4 teaspoon cinnamon, 1/8 teaspoon nutmeg and food coloring. Bring to a boil, remove from heat and stir in 3 tablespoons butter. Set aside.
  3. In a large bowl, combine flour, baking powder and salt. Cut in shortening, using knives or pastry blender, until mixture resembles coarse crumbs. Pour in milk, all at once, and stir to form a dough. On a floured surface, roll dough into a 1/4 inch thick, 12x18 rectangle. Cut into 6 - 6 inch squares.
  4. Place a whole, peeled and cored apple in the center of each pastry square. Dust each apple with a mixture of the of sugar, cinnamon and nutmeg. Dot with a tablespoon of butter. Moisten the edges of the pastry square, bring the corners together at the top of the apple, and press edges together to seal. Place dumplings 1 inch apart on a baking sheet.
  5. Pour the syrup over the dumplings and sprinkle with additional sugar, if desired.
  6. Bake in preheated oven for 35 minutes, until apples are tender.

1/4cup packed brown sugar
1teaspoon salt
1/2teaspoon pepper
3tablespoons liquid smoke
2cloves garlic, finely chopped
1medium onion, sliced
1/2cup cola
1 1/2cups barbecue sauce

1.Spray inside of 4- to 5-quart slow cooker with cooking spray.
2.Remove inner skin from ribs. Mix brown sugar, salt, pepper, liquid smoke and garlic; rub mixture into ribs. Cut ribs into 4-inch pieces. Layer ribs and onion in slow cooker. Pour cola over ribs.
3.Cover and cook on low heat setting 8 to 9 hours or until tender. Remove ribs from slow cooker. Drain and discard liquid.
4.Heat coals or gas grill. Place ribs on grill. Brush with barbecue sauce. Cover and grill 4 to 6 inches from medium heat 15 minutes.

INGREDIENTS
1lb lean (at least 80%) ground beef
1small onion, chopped
1can (8 oz) pizza sauce
1can (11 oz) Pillsbury® refrigerated crusty French loaf
2cups shredded Italian cheese blend (8 oz)
1package (3 oz) pepperoni slices
1egg
1tablespoon water
Pizza sauce, if desired


DIRECTIONS
1.Heat oven to 350°F. Spray 9-inch glass pie plate with cooking spray. In 10-inch skillet, cook beef and onion over medium-high heat, stirring frequently, until beef is thoroughly cooked; drain. Stir in pizza sauce until well mixed.
2.Carefully unroll dough in pie pan so edges extend over sides. Pat dough in bottom and up sides of pan, leaving dough extended over sides. Spoon beef mixture into crust. Top with half of the cheese, the pepperoni and remaining cheese.
3.In small bowl, slightly beat egg and water. Fold extended edges of dough up and over filling; seal all edges. Brush crust with egg mixture.
4.Bake 38 to 48 minutes or until deep golden brown. Cool 15 minutes. Cut pizza into wedges; serve with additional pizza sauce.

Pineapple chicken stew

Weight Watchers Pineapple Chicken Stew recipe
Makes 4 servings

Ingredients
1 lb boneless skinless chicken, cut into 1 1/2 inch pieces
1 (8 ounce) can pineapple chunks in juice, drained and juice reserved
4 medium carrots, cut into 1 inch pieces
1/2 cup chicken broth
1 tablespoon cornstarch
1 teaspoon ground ginger
1/2 teaspoon ground allspice

Preparation
1. Mix all the ingredients (except the pineapple and cornstarch) in a 3 1/2 to 6 quart slow cooker.
2. Cover and cook on low heat setting for about 7-8 hours (or on high heat setting for 3-4 hours), or until the carrots are tender and the chicken is no longer pink in center.
3. Mix the reserved pineapple juice and cornstarch until smooth; gradually stir into the chicken mixture. Stir in the pineapple.
4. Cover and cook on high heat for about 15 minutes (or until slightly thickened).
5. Serve over hot cooked rice.

One serving is approximately 264 grams.

French Breakfast Puffs

  • 1/3 c butter
  • 1 c sugar (divided use)
  • 1 egg
  • 1 1/2 c flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp freshly grated nutmeg
  • 1/ 2 c milk
  • 1/3 c melted butter
  • 2 tsp cinnamon. I used a mixture of three different types from Penzeys and it was awesome.

Preheat oven to 375. Put the silicone liners in the muffin cups

Beat butter, 1/2 c sugar, and egg until light.

Sift dry ingredients together. Add alternately with the milk to the butter mixture.

Spoon batter into muffin cups and bake 20-25 minutes.

Immediately remove from muffin cups and dip in melted butter. Roll in mixture of 1/2 cup sugar and the cinnamon. Serve warm.

Lemon Pound Cake

Ultimate Lemon Pound Cake With Lemon Thyme Strawberries:

For the Cake:
2 3/4 cups all purpose flour
1/2 tsp baking powder
1/4 tsp salt
3 sticks unsalted butter at room temperature
2 cups sugar
6 large eggs
1 cup milk
2 TB lemon zest
1/2 cup fresh lemon juice

Preheat oven to 300F. Butter and flour a 12 cup Bundt pan.
Sift the flour, baking powder and salt together.Cream the butter and 1 3/4 cups sugar until pale and fluffy. Add the eggs, one at a time, beating well after each addition. Reduce the speed and add the flour mixture, alternating with the milk, beginning and ending with the flour. Stir in the lemon zest.Pour the batter into the prepared pan and bake for 1 1/2 hours, or until a knife inserted in the middle comes out clean. Let cool in the pan for 15 minutes. Poke holes all over the cake with a wooden skewer.
Meanwhile, bring the lemon juice and remaining sugar to a boil over medium high heat in a small saucepan, stirring until the sugar is dissolved. Invert the cake onto a rack, positioned over a baking sheet and slowly pour the syrup over the cake, it will seep through the holes and into the cake. Let cool to room temp.

For the lemon thyme strawberries:
4 cups sliced strawberries
1/2 cup chopped lemon thyme
2 Tb lemon juice
2 Tb sugar (that is plenty to release the strawberry juices and the cake being sweet you don't really need much more)

Mix all the ingredients together and let macerate at room temperature for 30 minutes. Refrigerate until ready to use. Bring back to room temp before serving.

Update on conversions:
1 stick of butter is about 112-115 gr.

Weight Watchers Layered Fruit Salad recipe
Makes 6 servings

Ingredients
2 medium bananas, sliced
2 cups pineapple chunks
2 medium oranges, peeled and sectioned
2 kiwi fruit, peeled and sliced
1 cup red seedless grapes
1 pint strawberries, sliced
1 medium grapefruit, peeled and sectioned
1/2 cup orange juice
1/2 teaspoon orange zest
1/4 cup lemon juice
1/4 cup packed brown sugar
1/2 teaspoon grated lemon, rind of
1 cinnamon stick

Preparation
1.In a medium saucepan, combine the orange juice and zest, lemon juice and rind, brown sugar and cinnamon stick. Bring to a boil.
2. Reduce the heat and simmer, uncovered, for about 5 minutes.
3. Remove from the heat and let cool completely.
4. Layer the fruit in a glass serving bowl.
5. Remove the cinnamon stick from the sauce; pour the sauce over the fruit.
6. Cover and chill for several hours before serving.
